Tortilla de patatas
Tortilla de Patatas are very popular in Spain. This is basically an omelette made with potatoes, usually made with around 6 eggs. Other ingredients such as onions can also be added to the dish. Tortillas from Spain are completely different from Tortillas that come from Mexico.
Ingredients: 6 eggs
3 to 4 potatoes (peeled and thinly sliced)
200ml oil (olive oil)
1 thinly chopped onion
1 thinly chopped green pepper
salt (to taste)
Instructions: Heat the oil in a frying pan. Fry the sliced potatoes until they are almost soft, stirring to ensure they don't stick to the bottom of the pan. Add the onion and green pepper and continue frying until all the vegetables are tender. Drain the extra oil out. Beat the eggs in a bowl and add salt and pepper to taste. Then, add the potatoes, onions and pepper and mix well. Now, heat a little oil in a frying pan on moderate heat. Add everything to the pan and heat for a few minutes, while shaking the pan often. Then, cover the pan and cook for about ten minutes.
Here comes the tricky part! Turn the omelette over either by flipping it or by sliding it into a plate and then putting it back into the pan. Continue heating it until the omelette is completely cooked.
Serving Suggestion: Cut into small pieces (like slices of pizza) and serve hot or cold.
